Ingredients
- 3 very ripe bananas, mashed
- ½ cup Mountain Ridge Honey
- ⅓ cup melted unsalted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1¾ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon ground cinnamon
- ½ teaspoon salt
- ½ cup chopped walnuts or pecans, optional
- Extra Mountain Ridge Honey for drizzling
Instructions
- Preheat oven to 350°F. Grease a 9x5-inch loaf pan or line it with parchment paper.
- In a large bowl, mash the bananas until mostly smooth.
- Whisk in the Mountain Ridge Honey, melted butter, eggs and vanilla until combined.
- In a separate bowl, whisk together the flour, baking soda, cinnamon and salt.
- Add the dry ingredients to the banana mixture and gently stir until just combined. Avoid overmixing.
- Fold in the walnuts or pecans, if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let cool in the pan for about 10 minutes before transferring to a wire rack.
- Serve warm with a light drizzle of Mountain Ridge Honey.
