Honey Chocolate Covered Strawberries

- 1 lb fresh strawberries, washed and completely dry
- 1 cup dark chocolate chips or chopped dark chocolate (60–70% cacao)
- 1–2 tablespoons Mountain Ridge Honey
- 1 teaspoon coconut oil (optional, for smoother chocolate)
Instructions

- Line a baking sheet with parchment paper and set aside.
- Melt the dark chocolate and coconut oil together using a double boiler or microwave in 20-second intervals, stirring until smooth.
- Stir in the Mountain Ridge Honey until fully incorporated.
- Hold each strawberry by the stem and dip into the honey-chocolate mixture, letting excess drip off.
- Place strawberries on the prepared baking sheet.
- Refrigerate for 15–20 minutes, or until the chocolate sets.
Tips

- Make sure strawberries are fully dry so the chocolate sticks properly.
- Drizzle extra chocolate on top for a bakery-style finish.
- Best enjoyed the same day, but can be stored in the fridge for up to 24 hours.
