Honey Energy Bites

Ingredients
  •  1 cup rolled oats 
  •  ½ cup peanut butter (or almond butter) 
  •  ⅓ cup honey (Mountain Ridge Honey) 
  •  ¼ cup mini chocolate chips 
  •  2 tablespoons ground flaxseed 
  •  1 teaspoon vanilla extract 
  •  Pinch of salt

Instructions
  1.  In a mixing bowl, combine oats, peanut butter, and Mountain Ridge Honey. 
  2.  Stir in chocolate chips, flaxseed, vanilla extract, and salt. 
  3.  Mix until everything is fully combined and sticky. 
  4.  Scoop and roll into 1-inch balls. 
  5.  Place in the fridge for 20–30 minutes to firm up. 

How to Store
  •  Store in an airtight container in the fridge for up to 1 week 
  •  Freeze for longer storage and grab as needed

Pro Tip
If the mixture feels too sticky, add a little more oats. Too dry? Add a small drizzle of honey to bring it together.
