Honey Pancakes

Ingredients (makes ~8 pancakes):
- 1 cup all-purpose flour
 - 2 tsp baking powder
 - ¼ tsp baking soda
 - ¼ tsp salt
 - 1 large egg
 - ¾ cup milk (or buttermilk for extra fluffiness)
 - 3 tbsp Mountain Ridge honey (plus more for drizzling)
 - 2 tbsp melted butter (or neutral oil)
 - 1 tsp vanilla extract
 
Optional Add-ins:
- ½ tsp cinnamon for warmth
 - Fresh fruit (blueberries, bananas) folded into the batter
 
Instructions:
- Mix dry ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt.
 - Mix wet ingredients: In another bowl, whisk egg, milk, honey, melted butter, and vanilla until smooth.
 - Combine: Pour wet into dry ingredients. Gently stir until just combined (a few lumps are fine—don’t overmix).
 - 
Cook: Heat a nonstick skillet or griddle over medium heat. Lightly butter or oil the surface. Pour about ¼ cup batter per pancake.
- Cook until bubbles form on top and edges look set (2–3 min).
 - Flip and cook another 1–2 min until golden.
 
 - 
Serve: Stack warm pancakes and drizzle generously with honey. Add fruit, nuts, or a dollop of yogurt if desired.
 
Tip: Warming the honey slightly before drizzling makes it silkier and easier to pour!
