Matcha White Chocolate Chip Cookies with Mountain Ridge Honey

Ingredients (Makes 12 cookies):

  • 1 ½ cups all-purpose flour
  • 1 tbsp matcha powder (high-quality for best flavor)
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¼ cup Mountain Ridge Honey
  • ¼ cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • ½ cup white chocolate chips

Instructions:

    1. Preheat & Prep:
      • Preheat your oven to 350°F (175°C).
      • Line a baking sheet with parchment paper.
    2. Mix Dry Ingredients:
      • In a medium bowl, whisk together the flour, matcha powder, baking soda, and salt.
    3. Cream Butter & Sweeteners:
      • In a large bowl, beat the softened butter, Mountain Ridge Honey, and sugar until light and fluffy.
    4. Add Wet Ingredients:
      • Mix in the egg and vanilla extract until well combined.
    5. Combine Everything:
      • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
      • Fold in the white chocolate chips.
    6. Scoop & Bake:
      • Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
      • Bake for 10-12 minutes, or until the edges are set and lightly golden.
    7. Cool & Enjoy:
      • Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
